My Mother's Most Famous Recipes

If you haven't had my mother's cooking, then you haven't lived. She has an amazing talent for pleasing palates. Ever since I was young, she has given my brother and I the choice of whatever type of birthday cake we want on our special day. This one has and will always be my first choice.
I have always been a coconut fanatic. This delectable cake will make you want to dig your granny up and slap her.

Note: If you don't like coconut, you can substitute it for any of your favorite nuts, candy bars, etc.
                                                                                             
Almond Joy Cake

1 pkg. chocolate cake mix (Devil's food is the best I've tasted)
1 1/2 c. sugar
1 c. sugar (yes, it's layered so you will need both cups of sugar)
1 pkg. semi-sweet choc. chips
1 c. milk
1 1/2 c. sliced almonds
24 large marshmallows
1 c. evaporated milk
14 oz. shredded coconut
1 stick butter

Now the fun part....

     Mix cake mix as directed on package. Follow baking times on package in a rectangular pan or 3 round cake pans, sprayed with cooking spray. Allow cake to cool 10-15 minutes.

     First layer: Bring 1 cup milk and 1 cup sugar to quick boil. Melt marshmallows. Pour in coconut. Pour over cake.

     Second layer: Bring 1 1/2 cups sugar and evaporated milk to quick boil. Add chips and butter. Stir until melted. Stir in nuts. Allow the chocolate-nut mixture to cool slightly and then pour over cake and other filling.

Note: If you are making a 3-layer cake, put coconut mixture between the layers. Then add the 3rd layer and pour the chocolate-nut mixture on top.
